Spaghetti and Meatballs
Tender beef meatballs simmered in marinara over a tangle of spaghetti.
If you have never made Tiramisu at home, this is the version to start with: espresso-soaked ladyfingers layered with sweet mascarpone cream. A gentle simmer -- not a hard boil -- is what keeps everything tender instead of tough.

Whisk the egg yolks and sugar in a heatproof bowl set over a pot of barely simmering water. Whisk constantly 5 to 7 minutes until pale and thick, then remove and let cool slightly.
Whisk the mascarpone into the yolk mixture until smooth.
In a separate bowl, whip the heavy cream to stiff peaks, then gently fold it into the mascarpone mixture.
Stir the espresso and coffee liqueur together in a shallow dish. Quickly dip each ladyfinger (1 second per side - do not soak) and line the bottom of a 9x9 dish.
Spread half the mascarpone cream over the ladyfingers. Add a second dipped layer, then the remaining cream.
Cover and refrigerate at least 4 hours (overnight is best) so it sets.
Dust generously with cocoa powder just before slicing and serving.
