Spaghetti and Meatballs
Tender beef meatballs simmered in marinara over a tangle of spaghetti.
If you have never made Lasagna Bolognese at home, this is the version to start with: layers of pasta, rich meat sauce, and creamy cheese baked until bubbling. A gentle simmer -- not a hard boil -- is what keeps everything tender instead of tough.

Make the sauce: brown the beef and sausage in a large pot over medium-high, breaking it up, about 8 minutes. Spoon off excess fat.
Add the onion and cook 4 minutes, then the garlic for 1 minute. Stir in the crushed tomatoes, tomato paste, sugar, and Italian seasoning. Simmer 20 minutes, then season with salt and pepper.
Cook the lasagna noodles in salted boiling water 2 minutes less than the package says. Drain and lay flat so they do not stick.
In a bowl, mix the ricotta, egg, Parmesan, and a pinch of salt.
Heat the oven to 375 degrees F. In a 9x13 dish, layer: a little sauce, noodles, ricotta mix, mozzarella, and meat sauce. Repeat until you finish with sauce and mozzarella on top (about 3 layers).
Cover with foil (tented so it does not touch the cheese) and bake 25 minutes. Remove the foil and bake 20 more minutes until golden and bubbling.
Let the lasagna rest 15 minutes before slicing so the layers hold.
