Method

  1. Step 1

    Cook the pork in a skillet over medium-high, breaking it up, until browned, about 8 minutes.

  2. Step 2

    Add the onion, bell pepper, and celery and cook 6 minutes, then the garlic, Cajun seasoning, and cayenne for 1 minute.

    Stir in the cooked rice and mix well, cooking 3 minutes.

    For traditional boudin, stuff the mixture into sausage casings and poach gently 10 minutes; for boudin balls, roll into balls, bread, and fry until crisp.
