Method

  1. Step 1

In a bowl, whisk the flour, baking powder, salt, and sugar. Rub in the shortening with your fingers until crumbly.

  2. Step 2

Add the warm water and mix into a soft dough. Knead 2 minutes, then cover and rest 20 minutes.

  3. Step 3

Roll the dough 1/4 inch thick and cut into squares or triangles.

  4. Step 4

Heat 2 inches of oil in a deep pot to 375 degrees F.

  5. Step 5

Fry a few pieces at a time, 1 to 2 minutes per side, until they puff up and turn golden. Drain on paper towels.

  6. Step 6

While warm, drizzle with honey and dust with cinnamon sugar. Serve right away.

Cook's tips

  • Keep the oil between batches at the target temperature; frying too many pieces at once cools the oil and makes the coating greasy instead of crisp.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Taste and adjust the seasoning right before serving -- salt levels vary a lot between brands of broth, sauce, and canned goods.
