Beef Enchiladas
Corn tortillas rolled around seasoned beef, baked under red sauce and cheese.
This Sopapillas is puffy fried dough pillows drizzled with honey and cinnamon sugar. Keeping the oil at the right temperature is what separates crisp, greaseless results from soggy ones.

In a bowl, whisk the flour, baking powder, salt, and sugar. Rub in the shortening with your fingers until crumbly.
Add the warm water and mix into a soft dough. Knead 2 minutes, then cover and rest 20 minutes.
Roll the dough 1/4 inch thick and cut into squares or triangles.
Heat 2 inches of oil in a deep pot to 375 degrees F.
Fry a few pieces at a time, 1 to 2 minutes per side, until they puff up and turn golden. Drain on paper towels.
While warm, drizzle with honey and dust with cinnamon sugar. Serve right away.
