Chicken Fajitas

If you have never made Beef Enchiladas at home, this is the version to start with: corn tortillas rolled around seasoned beef, baked under red sauce and cheese. Plan on roughly 55 minutes from start to finish, and it serves 6.

Heat the oven to 375 degrees F. Brown the beef in a skillet over medium-high, about 7 minutes. Add the onion and cook 4 minutes, then the garlic, chili powder, cumin, and salt for 1 minute.
Warm the tortillas 20 seconds in the microwave so they roll without cracking.
Spread 1/2 cup enchilada sauce in a 9x13 baking dish.
Fill each tortilla with a spoon of beef and a little cheese, roll up, and place seam-side down in the dish.
Pour the remaining sauce over the top and cover with the rest of the cheese.
Bake 20 minutes until bubbly and melted. Top with cilantro and serve with sour cream.
