Beef Enchiladas
Corn tortillas rolled around seasoned beef, baked under red sauce and cheese.
There is a reason Loaded Nachos shows up on repeat in this kitchen: a loaded sheet of tortilla chips smothered in cheese, beef, and toppings. A gentle simmer -- not a hard boil -- is what keeps everything tender instead of tough.

Estimated from the ingredients above; actual values vary by brand and exact measurements.
Heat the oven to 400 degrees F. Brown the beef in a skillet over medium-high, 7 minutes, then stir in the taco seasoning and 1/4 cup water and simmer 2 minutes.
Spread half the chips on a foil-lined baking sheet. Scatter over half the beef, beans, and cheese.
Layer on the rest of the chips, beef, beans, and cheese.
Bake 8 to 10 minutes until the cheese is fully melted.
Top with pico de gallo and jalapeno slices. Add dollops of sour cream and guacamole and serve straight away.
