Tex-Mex
Beef Enchiladas
Corn tortillas rolled around seasoned beef, baked under red sauce and cheese.
Refried Beans is Tex-Mex done right -- creamy mashed pinto beans cooked with garlic and a little spice. A gentle simmer -- not a hard boil -- is what keeps everything tender instead of tough.

Mash the beans right in the pan with a potato masher or fork to your liking - leave some texture or make them smooth.
