Beef Enchiladas

This Queso Fundido is bubbly melted cheese with chorizo for scooping with chips. It comes together in about 25 minutes, which makes it an easy weeknight option.

Heat the oven to 400 degrees F.
Cook the chorizo in a skillet over medium-high, breaking it up, 5 to 6 minutes until browned. Add the onion for the last 2 minutes. Drain the fat.
Put the shredded cheese in an oven-safe skillet or baking dish and bake 8 to 10 minutes until fully melted and just bubbling.
Spoon the chorizo and onion over the melted cheese and scatter the diced tomato on top.
Serve immediately (cheese firms up as it cools) with warm tortillas or chips for scooping.
