Tex-Mex
Beef Enchiladas
Corn tortillas rolled around seasoned beef, baked under red sauce and cheese.
Few Tex-Mex dishes are as reliable as Beef Burrito: a big flour tortilla wrapped around seasoned beef, rice, and beans. Keeping the oil at the right temperature is what separates crisp, greaseless results from soggy ones.

Brown the beef in a skillet over medium-high, 7 minutes. Stir in the taco seasoning and 1/4 cup water and simmer 2 minutes.
Warm the tortillas so they fold easily. Warm the refried beans.
Lay a tortilla flat and spread refried beans down the center. Top with rice, beef, cheese, salsa, and a little lettuce and sour cream.
Fold in the sides, then roll up tightly from the bottom into a burrito.
For a crisp finish, toast the burrito seam-side down in a dry skillet 2 minutes per side. Slice in half and serve.
