Beef Enchiladas

If you have never made Cheese Quesadillas at home, this is the version to start with: crisp golden tortillas folded around melted cheese. It comes together in about 20 minutes, which makes it an easy weeknight option.

Heat a large skillet over medium and melt a little butter.
Lay one tortilla in the pan. Sprinkle cheese (and a few green chiles) over half of it, then fold the tortilla over into a half-moon.
Cook 2 minutes until the bottom is golden, then flip and cook 2 minutes more until crisp and the cheese is melted.
Repeat with the remaining tortillas, adding a little butter each time.
Cut each quesadilla into wedges and serve warm with salsa and sour cream.
