  • 1 lb Italian sausage, casings removed
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan
  • 1/2 tsp red pepper flakes
  • fresh basil

Method

  1. Step 1

    Brown the sausage in a large skillet over medium-high, breaking it up, 7 minutes. Add the onion and cook 4 minutes, then the garlic and red pepper flakes for 1 minute.

    Meanwhile cook the rigatoni in salted water to al dente. Reserve 1/2 cup pasta water, then drain.

    Add the pasta and Parmesan, tossing with a splash of pasta water until glossy.

    Finish with fresh basil and serve.
