  • 1/3 cup milk
  • 1 cup cherry tomatoes halved
  • 1 zucchini diced
  • 1 cup spinach
  • 1/2 onion diced
  • 1 cup shredded cheese
  • 2 tbsp olive oil
  • salt and pepper

Method

  1. Step 1

    Heat the oven to 375 degrees F.

    Heat the oil in an oven-safe skillet over medium. Cook the onion and zucchini 5 minutes, add the tomatoes and spinach and cook 2 minutes until wilted.

    Whisk the eggs with the milk, salt, and pepper, then stir in half the cheese.
