Toss all the vegetables with the olive oil, garlic, salt, pepper, and oregano.
Thread the vegetables onto the skewers, alternating colors.
Heat a grill to medium-high and oil the grates.
Grill the skewers, turning every 3 minutes, 10 to 12 minutes until tender and charred at the edges.
Serve hot as a side or over rice.
