Method

  1. Step 1

Heat the oven to 375 degrees F and lightly butter a 9x13 inch baking dish.

  2. Step 2

Bring a large pot of salted water to a boil. Cook the noodles 1 minute less than the package says, then drain.

  3. Step 3

Melt the butter in a large saucepan over medium heat. Add the onion and mushrooms and cook 5 minutes until soft.

  4. Step 4

Sprinkle in the flour and stir constantly for 1 minute. Slowly pour in the milk while whisking, then cook 3 to 4 minutes until it thickens enough to coat a spoon.

  5. Step 5

Turn off the heat and stir in the cheddar until melted. Fold in the tuna, peas, salt, pepper, and the drained noodles.

  6. Step 6

Spread into the baking dish and scatter the crushed crackers evenly over the top.

  7. Step 7

Bake 20 to 25 minutes until bubbling at the edges and golden on top. Let cool 5 minutes before serving.

Cook's tips

  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Taste and adjust the seasoning right before serving -- salt levels vary a lot between brands of broth, sauce, and canned goods.
  • Prep all the ingredients before you start cooking; this one moves quickly once it is on the heat.
