  • 4 large onions, thinly sliced
  • 4 tbsp butter
  • 1 tsp sugar
  • 3 cloves garlic minced
  • 1/2 cup white wine
  • 6 cups beef broth
  • 1 tsp thyme
  • 4 slices baguette, toasted
  • 2 cups shredded Gruyere

Method

  1. Step 1

    Melt the butter in a large pot over medium. Add the onions and sugar and cook 30 to 40 minutes, stirring often, until deep golden brown - do not rush this step, it is where the flavor comes from.

  2. Step 2

    Add the garlic and cook 1 minute, then pour in the wine and simmer 2 minutes.

  3. Step 3

    Add the broth and thyme and simmer 20 minutes.

  4. Step 4

    Ladle the soup into oven-safe bowls and float a toasted baguette slice on each.

    Pile Gruyere on top and broil 3 to 5 minutes until bubbly and golden.

    Serve hot and careful - the bowls are very hot.
