Stir in the egg, buttermilk, and grated onion to make a thick batter. Let it rest 10 minutes.
Heat 2 inches of oil in a deep pot to 350 degrees F.
Using two spoons, drop small balls of batter into the oil, a few at a time.
Fry 2 to 3 minutes, turning, until deep golden and cooked through.
Drain on paper towels, sprinkle with salt, and serve warm.
