This Mussels Marinara is mussels steamed in a garlicky tomato-wine broth. A gentle simmer -- not a hard boil -- is what keeps everything tender instead of tough.

Rinse the mussels and pull off any beards. Discard any that are cracked or stay open when tapped.
Heat the olive oil in a large pot over medium. Cook the garlic and red pepper flakes 1 minute.
Pour in the wine and crushed tomatoes and bring to a simmer.
Add the mussels, cover, and steam 5 to 7 minutes until the shells open. Discard any that stay shut.
Stir in the parsley.
Ladle the mussels and broth into bowls and serve with crusty bread for dipping.
