Remove the small side muscle from each scallop. Pat them completely dry and season with salt and pepper - moisture is the enemy of a good sear.
Heat the oil in a skillet over high until just smoking.
Lay the scallops in the pan without touching and do not move them. Sear 2 minutes until a golden crust forms.
Flip, add the butter and garlic, and cook 1.5 minutes, spooning the butter over the scallops.
They should feel just firm - overcooked scallops turn rubbery.
Finish with lemon juice and serve immediately.
