Mix all the spices together in a shallow dish.
Brush both sides of each fillet with melted butter, then press into the spice mix to coat fully.
Heat a cast-iron skillet over high until very hot and lightly smoking - blackening needs high heat.
Lay in the fillets and cook 3 minutes without moving them until the crust is dark.
Flip and cook 3 more minutes until the fish flakes easily.
Serve with lemon and a cool remoulade.
